Emmentaler Tradition Classic made by Von Mühlenen is the authentic Emmental of Switzerland. It is produced in the traditional way in small village dairies. Only pure raw milk, natural bacterial cultures and a natural rennet is used to produce this cheese. It is strictly additive-free. The cheese is ripened for 5 months in climate-controlled cellars and is washed with water once a week. Emmentaler Tradition from Von Mühlenen is produced mainly in the valley of the Emme river.
